Two Spectacular Swiss Soup Recipes

Soup is popular in Switzerland and vegetable broth recipes are a great way of warming up. If you enjoy chicken noodle soup on a regular basis, what about making one of the following Swiss soup recipes for a change? You might want to prepare the simple but full-flavored artichoke broth or what about our delicious potato soup with mustard and two kinds of cheese?

Swiss Artichoke Soup

This is a rich and creamy soup. At the end of the cooking time, you add some cream to make it extra rich. If you do not want to use cream, you can stir in an ounce of melted butter instead.

What you will need:


3 chopped stalks celery
2 lbs Jerusalem artichokes
2 bay leaves
1 quart milk
2 oz melted butter
1 chopped onion
1/2 cup light cream
Salt and black pepper, as needed
How to make it:

Peel the artichokes and dip them into vinegar and water. Add them to a pot with the butter, celery, and onion and cover it. Steam the vegetables until they are tender but do not let them brown. Add the milk and warm the mixture through slowly.

Swiss Style Potato Soup

This tasty recipe serves eight people and it is so easy to make. To speed up cooking the potatoes, make sure you bring the water to a boil in the kettle first, and then pour it over the potatoes. This is much faster than putting the potatoes in cold water and letting them reach a boil on the stove.

Forget bouillon cubes, chopped bacon, and other fattening ingredients because the fresh-cooked potatoes and tasty onions give you all the flavor you need. Nutmeg and Dijon mustard are great ingredients too and really complement the overall taste. Use freshly grated nutmeg for the best results.

What you will need:


1/3 cup all purpose flour
1/3 cup olive oil
2 1/2 lbs peeled, cubed potatoes
1 tablespoon chopped garlic
2 cups chopped onion
2 tablespoons blue cheese
1 1/2 teaspoons salt
5 oz grated Swiss cheese
1/2 cup cream or milk
1 tablespoons white vinegar
1/4 teaspoon ground nutmeg
1/2 tablespoon Dijon mustard
How to make it:

Simmer the potatoes until they are tender. Saute the onions and garlic in the oil until soft, then add the flour and salt and combine. Add the hot broth from the cooked potatoes and bring the mixture to a boil. Cook for two minutes, then stir in the potatoes and cheese and let it sit for ten minutes. Add the cream, mustard, vinegar, and nutmeg and serve.
